Hello everyone,
Today I thought I would share with you my recipe for these cute little unicorn cupcakes. Now I'm loving unicorns and anything multi coloured at the moment and thought I would make these for my sisters friends daughters birthday. This recipe made around 8 cupcakes...
Ingredients
-160g butter
-160g caster sugar
-160g self raising flour
- 2 eggs
- Betty Crocker Vanilla butter cream
- Pink food colouring
-Blue food colouring
-Yellow food colouring
-Roll out icing
Method
- Begin by adding the butter and sugar to a bowl and cream together.
- Once the butter is lighter in colour and lighter in texture, add the two eggs and whisk again.
- Now add the flour to the mixture and fold in.
- Pop the cake mixture into the cupcake cases and bake for around 10-15 minutes at gas mark 6/ 200 degrees c.
- Once the cakes are golden brown on top, leave to rest until they are cool.
- Whilst the cakes are cooling, split the buttercream into 3 separate bowls and add the 3 food colours to the mixtures.
- Make sure the colours are bright as when they are mixed together, the colours can fade.
- Add small teaspoons on the different coloured icing, one by one into a piping bag, so the colours merge together.
- Once the cakes are cool, pipe around the perimeter of the cake and then on into the center.
- As for the horn and ears, take a small amount of roll out icing and shape into a long thin sausage.
- Then wrap the sausage up to create a horn shape that is tapered at the end.
- As for the ears, roll into balls and then pinch the end .
- Using edible gold shimmer glitter, add a little water and paint this onto the horn and on the small part of the ear.
- Let these dry and then pop them on top of the cake.
- Sprinkle a little bit of glitter over the top of the cupcakes and then you have your Unicorn cupcakes.
