Hello everyone,
Today is the first day of the 'twelve days of Blogmas' and I am so excited to share with you the first post. Today I made some festive iced sugar cookies and I thought I would share with you lovelies the recipe, as this seems to be a tradition on my blog now. I absolutely love baking and I love it when it's easy and I can spend time making it look pretty as well as being yummy. These are honestly so easy to make and you can get so creative with them. This recipe made around 16 biscuits.
Ingredients
For the biscuit: 250g of butter (at room temperature)
200g of sugar
1 egg
2 egg yolks
400g plain flour
1 tsp Vanilla extract
Pinch of salt
For the icing: icing sugar
Vanilla extract
1 egg white
Food colouring of your choice
Method
1. Begin by whisking the butter with an electric whisk and then once the colour of the butter is a little lighter, add in the caster sugar and whisk for a further 3 minutes.
2. Add the vanilla extract and the egg and whisk until the egg Is combined into the mixture.
3. Now add the egg yolks into the mixture and set the egg whites aside for later on.
4. Once all the egg is combined, you can now add the pinch of salt and the flour. You can probably use the electric whisk to start with, but when the mixture gets thicker, maybe change to a spatula.
5. Dust a plate with flour and place the dough onto the plate and transfer into the fridge to cool for about 30 minutes to 1 hour.
6. Once the dough is cool, flour your surface and pop the dough onto the work top. You can now roll out the dough to around £1 coin depth and pop them onto a greased tray.
7. Bake the cookies for around 10 minutes at gas mark 6 until golden brown.
8. Once the biscuits are baking, you can move onto making your icing.
9. Begin by whisking the two eggs and slowly adding the icing sugar until you get your desired consistency. Make sure the icing Is thick enough so it does not fall off the buiscuit.
10. Add the food colouring and now you are ready to pop your icing into a piping bag and create some festive designs in the cookies.
